Hugo Lopez Jimenez, who bought La Sierra in 2000, runs the farm himself with the help of only one employee. Though only 15 acres, La Sierra produces 4,000 kilos of coffee annually. Most of the farm is planted with Caturra, with a smaller mix of other Arabica varietals. The coffee is picked ripe, depulped & fermented for 24 hours before being washed and then dried for 36 hours on patios. Hugo has plans to expand his farm, plant more coffee & obtain organic certification.
