The Chacons began producing honey-processed coffees in 2008 after an earthquake cut off water to their farm. For all their honey coffees 100% of the mucilage is left on the coffee bean. This black honey is turned just once a day on covered patios and dried slowly over several weeks giving it extra complexity and sweetness. 

Farms in this area encounter a lot of erosion issues.  The Chacons allow weeds to develop under and between plants throughout the growing season to combat erosion.  After harvest they remove these weeds with shovels as they don’t want these to compete with the plants for nutrients. 

The Chacons also plant a natural anti pesticide plant called huiguillo and use coffee pulp (cascara) compost and chicken manure to fertilize. This is the combined method used to produce this 100% organic certified coffee.

La Mirella was one of the first farms in the area to encounter roya (leaf rust).  The Chacons diligently pruned all the trees and planted several new varietals.  The root system of these varietals are more expansive and therefore need less fertilizer & they are better for soil erosion.   Geoff cupped several different lots, varietals & processes on his trip to this farm and landed on this spectacular black honey processed caturra & catuai lot.
